If you're looking for a healthy and flavorful sandwich option, then you should try this spinach corn cheese sandwichrecipe which is not only easy to make but very nutritious high protein recipe.
First wash spinach and strain extra water from it. Then finely chop them and keep aside in a bowl.
Put a pan on low medium flame and add chopped spinach. Cook spinach till it starts releasing water, transfer that water to a bowl and keep aside. You can use this water to make chapatti dough or in making of dals.
Now cook spinach further till it becomes soft and has no moisture left. The whole process will take around 4-5 minutes.
Switch off the flame and let it cool completely.
Meanwhile, boil water in a pan and add sweet corn to it. Cover and boil it for 1-2 minutes.
Then switch off the flame. Cover it and leave aside for 4-5 minutes.
Strain extra water from corns, keep them aside and let them cool.
Preparation of filling
Take a bowl, add roasted spinach, boiled corn, grated carrot, grated cheese, 3-4 tbsp green homemade coriander mint chutney.
At last add 2 tbsp curd and mix all together well. Keep it aside.
Now take whole grain bread slices. On one side spread 2-3 tbsp filling. Finally, add another slice of bread on top to complete the sandwich.
Prepare all the sandwiches like this. After that on the top slices apply a very little amount of malai or milk cream. Spread it evenly
Now heat an iron griddle on a low medium flame. Place a sandwich on the tawa with side down where we applied malai.
Now apply malai on the other side of the sandwich and Grill it for few seconds of till it becomes crispy.
Flip to other side and grill it too till it becomes crispy.
Transfer to a plate and cut into triangle or rectangular shape and serve warm.

1. I have used whole-grain bread for making these sandwiches. You can use any bread of your choice but whole grain or multigrain will provide more fibre and nutrition.2. You can use butter or oil for grilling sandwichs but malai gives a more rich flavour and crispier texture.3. You can add other vegetables like tomato, cucumber, olive etc. if you like.4. Serve them warm for a best taste.5. Don't leave filling or stuffing for long once it prepared as it starts leaving water and then make the sandwich soggy.6. Also add filling to the sandwiches just before the grilling process.
