What is 7 Cup burfi or seven cup fudge

This sweet got its name “7 cup burfi” as 7 cups of ingredients are used in making this delicious sweet. Traditionally, this burfi is made with 5 basic ingredients in the ratio of 1:1:1:1:3 where we take 1 cup each of besan, ghee, coconut, milk and 3 cups of sugar. Seven cup fudge is very sweet in taste as it contains a high amount of sugar.

About this recipe

My recipe of 7 cup burfi with milk powder is a modified version of this traditional sweet. Although, I have used 7 cups of ingredients but in different proportions to lower down the sugar content in it. Other healthy sweet recipe you would like to try

Along with other ingredients, I have added fresh homemade cream(malai) and milk powder that increase the softness as well as gives a richer taste. The texture of this seven cup fudge is so soft it just a melt in mouth sweet recipe. This recipe is very easy to prepare even a beginner can make it.

Ingredients used in the making of 7 cup burfi

  • Besan
  • Ghee
  • Coconut powder
  • Sugar
  • Malai
  • Milk
  • Milk powder
  • Chopped almonds and pista
  • Cardamom powder

The colour of seven cup fudge is on the lighter side but it will change if you roast besan for a longer time. It also depends upon the amount of sugar added. As sugar gets caramelized during cooking and change the colour to slightly darker.

For making this recipe you do not need any standard size cup. Just take any regular bowl and measure all the ingredients with it.

Step by step preparation of 7 cup burfi with milk powder

1. In a big pan, first, add besan and ghee. Roast besan in ghee on a low flame for about 4-5 minutes till its raw smell is gone. 

2. After that, add coconut powder, sugar, milk and malai. Mix well and cook it on medium flame till it becomes a little thick. It will take around 15-20 minutes.

3. Then add milk powder and mix. Cook it till it starts leaving the pan. At this point, add cardamom powder and mix.

4. Cook further till the mixture becomes thick and leaves the side. Switch off the flame.

5. Line a tray with parchment paper. Sprinkle chopped nuts over it. Then transfer the mixture to it and spread it evenly with equal thickness.

6. Let it set for 4-5 hours. Cut into desire shape and store them in an airtight container.

Serving suggestions

Serve these delicious melt in mouth sweets as an after meal dessert or make during festival time for gifting purpose.

Tips and tricks

  1. Roast besan with ghee on a low flame till its raw smell is gone. Its colour should not change.
  2. After adding all the ingredients, cook the mixture on medium flame with stirring continuously.
  3. My version of 7 cup burfi is on the softer side. To make it a little hard, increase the sugar content and cook it further for 4-5 more minutes and then set.
  4. You can also add chopped nuts into the mixture to get a crunchy texture.

  • ½ cup malai 130 gm
  • 1 cup milk 250 ml
  • 1 cup milk powder 90gm
  • ½ tsp cardmom powder
  • 1 tbsp chopped almonds
  • 1 tbsp chopped pista
