- Barley Sattu Powder
- water

- 3 tablespoons cooked jau sattu mixture
- Spices & salt for taste
- Boondi and fresh coriander leaves (optional) to enhance taste and digestibility
- Water as required

- Cooked sattu mixture
- Dried fig (anjeer) & soft dates to add sweetness
- A pinch of cardamom powder to enhance flavour
- Chopped almonds and pistachios for garnishing (optional)

Step by step preparation of quick summer drinks with barley sattu
Step 1 Cooking of Jau(Barley) sattu Powder
- In a pan, add 3 tbsp jau sattu and 1 cup water. Cook on low flame for 2–3 minutes while stirring continuously.
- Once the mixture thickens slightly, turn off the heat and let it cool completely.
- Soak 1 dried fig and 2 soft dates for 25-30 minutes.
Step 2 Preparation of Barley Sattu Lassi
- Transfer half of the mixture to a bowl. Add 1/2 cup curd, black salt to taste, 1/4 tsp cumin powder, and 1 pinch of black pepper powder.
- Whisk well until smooth.
- Add 1/2 cup water to adjust consistency and mix again.
- Pour into a serving glass and garnish with 1-2 tbsp besan boondi and 1-2 tbsp chopped fresh coriander coriander.
- Serve chilled for a refreshing experience.
Step 3 Preparation of Barley Sattu Energy Drink
- In a blender transfer rest of the cooked jau sattu mixture.
- Add soaked dried fig and dates. Blend untill smooth.
- Now add 1/4 tsp cardamom powder, 2-3 ice cubes, and 3/4 cup water to it. Blend again util smooth & creamy.
- Pour into a serving glass, garnish with some chopped almonds & pista. Serve immediately as a natural energy booster.
