Ingredients For Making Eggless Rajgira Cookies
1. Unsalted Butter
Butter gives these cookies their rich flavour and tender, crumbly texture. Use soft, room-temperature butter rather than melted butter.
The butter should be soft enough to whisk easily but should not be oily or melted.
2. Desi Khand
Desi khand provides sweetness and a slightly caramel-like flavour to the cookies. It is used here instead of refined white sugar.
However, remember that desi khand is still a source of sugar, so these cookies should not be considered sugar-free.
3. Vanilla Essence
A little vanilla enhances the overall flavour and balances the nuttiness of rajgira and almonds.
4. Rajgira Atta
Rajgira atta, or amaranth flour, is the star ingredient of these cookies. Rajgira is commonly used during fasting in India and is also available as a flour for baking and other recipes. For a consistent texture, use fresh, finely ground rajgira flour.
5. Almond Powder
Almond powder gives the cookies a naturally nutty taste and contributes protein, healthy fats and other nutrients. It also helps create a tender texture.
6. Baking Powder, Baking Soda and Salt
A small amount helps the cookies become lighter instead of overly dense. Too much baking soda can affect both the taste and colour of the cookies. A little salt balances the sweetness and enhances the flavour.
7. Almond Flakes
Almond flakes are sprinkled over the cookies before baking. They provide a beautiful appearance and an extra almond crunch.

How to Make Vrat Friendly Rajgira Almond Cookies
Step 1 – Whip the Butter
Take room-temperature unsalted butter in a mixing bowl. Whisk the butter until it becomes light and fluffy.
This step helps incorporate air into the butter and gives the cookies a better texture.

Step 2 – Add Desi Khand
Add desi khand and vanilla essence. Whisk everything together until the mixture becomes light and creamy.
Step 3 – Add the Dry Ingredients
Now add rajgira atta, almond powder, baking powder, baking soda, and a pinch of salt. Mix everything gently.

Step 4 – Make the Dough
Use your hands to bring everything together and form a soft dough. Avoid kneading the dough like roti dough. Simply combine the ingredients until there are no dry patches.

Step 5 – Refrigerate
Cover the dough and refrigerate for 20–25 minutes. The dough will become slightly firm, making it easier to shape the cookies.
Step 6 – Shape the Cookies
Take small portions of the dough and roll them into balls. For evenly sized cookies, you can use a measuring spoon or cookie scoop.
Place the balls on a baking sheet lined with parchment paper.
Gently flatten each ball. Sprinkle almond flakes on top and lightly press them into the surface.

Step 7 – Bake
Preheat your oven to 180°C. Bake the cookies for approximately 13–15 minutes.
The edges should become lightly golden. Do not judge the final crispness immediately after removing them from the oven because the cookies will firm up as they cool.
Step 8 – Cool Completely
After baking, leave the cookies on the baking sheet for 1–2 minutes.
Then carefully transfer them to a wire rack. Allow them to cool completely before storing or serving.

Tips for Perfect Homemade Eggless Rajgira Cookies
- Always use room-temperature butter, not melted butter.
- Do not overmix or knead the dough.
- Refrigerating the dough makes shaping easier.
- Make cookies of similar size so they bake evenly.
- Keep an eye on the cookies during the last few minutes because oven temperatures can vary.
- Do not transfer very hot cookies immediately because they can break.
- Allow them to cool completely before storing.
- For fasting, always check whether every ingredient is allowed according to your specific vrat rules.
Are Rajgira Almond Cookies Gluten-Free?
Rajgira/amaranth itself is naturally gluten-free. However, if you need the cookies to be strictly gluten-free, check the packaging of ingredients such as baking powder, baking soda, vanilla and other processed ingredients and avoid cross-contamination in your kitchen. FSSAI maintains specific guidance around gluten-free foods and food standards.
Are These Cookies Sugar-Free?
No. Although this recipe does not use refined white sugar, it contains desi khand, which is still a source of sugar.
So it is more accurate to describe these as refined-sugar-free cookies, rather than sugar-free cookies.
Are Rajgira Cookies Good for Vrat?
Rajgira is commonly used during fasting and vrat recipes in India. Healthically Kitchen also lists rajgira among commonly used fasting ingredients.
However, whether this particular cookie is suitable depends on your family’s or tradition’s fasting rules.
If your vrat excludes baking powder, baking soda, vanilla or butter, modify the recipe accordingly or choose another vrat recipe.
Serving Suggestions
These cookies can be served:
- With a cup of tea or coffee
- As a small festive snack
- During vrat, if all ingredients fit your fasting rules
- With milk as an occasional snack
- As a homemade sweet treat during Navratri or other fasting periods
For a more balanced snack, avoid eating a large quantity simply because the cookies are made with rajgira and almonds. Nuts, butter and sweeteners are energy-dense ingredients.
How to Store Rajgira Flour Cookies
Once completely cooled, store the cookies in an airtight container. Keep them away from moisture to retain their crisp texture.
For best taste and texture, consume them fresh.
