Ingredients and their role
1. Makhana
Makhana, also called fox nuts, gives this fox nuts milkshake a mild flavour and pairs well with dates and almonds. It provides carbohydrates and a small amount of protein. Soaking it before blending helps soften it and makes it easier to blend smoothly. Check out my bajra panjiri and gud makhana recipe for a healthy refined sugar free winter dessert.
2. Almonds
Almonds contribute healthy unsaturated fats, a little protein and a mild nutty flavour.
3. Dried fig
Dried fig contributes natural sweetness, fibre and minerals.
4. Dates
Dates add natural sweetness, while almonds contribute flavour and richness, making this a delicious dates almond milkshake variation. Their sugar content is still relevant nutritionally, even when no refined sugar is added.
5. Grated lauki
Bottle gourd has a mild flavour and high water content. Cooking it until tender helps it blend smoothly into the milkshake. You can also try my other healthy lauki recipes- Lauki coriander soup, Sugar free lauki halwa, Lauki paratha, Lauki Ladoo, and Lauki Kheer Recipe.
6. Milk
Milk gives the drink its creamy texture and supplies protein and calcium. Use the milk you normally prefer, keeping in mind that the nutrition will vary by type.

How to make No Banana Lauki Makhana Milkshake or Smoothie
Step 1: Soak the ingredients
First add 10 g makhana, 4 almonds, 1 dried fig and 4 small dates (or 2 big dates) to a bowl. Pour in 1/4 cup toned milk and soak for one hour.

Step 2: Cook the lauki
Transfer 100 g grated lauki to a pan and add ½ cup milk. Cook on the lowest flame until the lauki becomes soft and tender, stirring occasionally so it cooks evenly.

Step 3: Cool completely
Switch off the flame and let the cooked lauki cool completely before blending.
Step 4: Blend until creamy
Transfer the cooked lauki and the soaked makhana and dry fruit mixture to a blender. Add the remaining 1/4 cup milk and blend until smooth.

Step 5: Serve
Pour into a serving glass and enjoy fresh.

Recipe tips
- Choose fresh lauki: It should taste mild, not bitter. Never use bitter-tasting bottle gourd; discard it, as bitterness can indicate potentially dangerous cucurbitacins. So, always taste your lauki first before making any dish.
- Cool before blending: Avoid adding hot ingredients to a sealed blender.
- Adjust the consistency: Add a little more milk or water if you prefer a thinner drink.
- No added sugar: Taste the shake before adding any sweetener; the dates and fig may provide enough sweetness.
- Serve fresh: Refrigerate promptly if you are not drinking it immediately.
