What is a cheesecake
A dessert made with cream cheese filling and a biscuits crumb base and mainly fruits on the top. There are 2 versions of cheesecake baked and without baking. Both types of cake are delicious in taste. Baked cheesecakes are mainly used eggs while no baked cheesecake requires agar-agar or gelatin to set them. The cake is sweetened with sugar and added a different flavour to give variations.
About eggless easy no-bake oreo cheesecake
It is a no baked cheesecake version made without using gelatin or agar-agar. This cheesecake recipe needs very basic ingredients that you can find easily at home. The cream cheese used for the filling is homemade. It is kept mildly sweeten to keep the sugar content lowest. No-bake Oreo cheesecake does not require any cooking.
Cheesecakes are made in a special kind of pan called spring form pan. It has two pieces a flat bottom part and the ring cover the sides. This ring contains a clip that opens up and easily removes from the base. Other options are also available as a removable bottom pan can be used or you can line the regular cake tin with parchment paper or cling film. Once the cheesecake sets you can easily remove it from the pan.
You can easily doubled or triple the recipe. I have used 7 inch spring form pan for this much of amount. you can choose the size of pan according to your requirements.
The texture of no bake cake is very light and creamy and taste delicious. We can make it ahead of time and refrigerate. It stays good for 3-5 days in the refrigerator.
The main ingredient used in the making of this low-fat Oreo cheesecake
Oreos: I used dark chocolate oreo biscuits with vanilla filling. you will need around 10-12 oreo biscuits for this. Half of them crushed into little bigger pieces for filling and the rest will be powdered to spread on the top of the cheesecake.
Digestive biscuits– for the base I used digestive biscuit, cocoa powder, butter, and little sugar to give a chocolate flavour to the base. You can even use oreo biscuit itself for the base, remove the cream and grind them into a fine powder.

Butter: Biscuits already have some salt content, so the use of unsalted butter is recommended.
Cream cheese: homemade cream cheese is used as it is economical and easily prepared at home. Prepare it beforehand and refrigerate it till it required. Bring it to room temperature before adding it to the filling. You can also buy from the market. Delecta, Britannia, Mooz are some brands available in India. But the best is Philadelphia cream cheese. It is very expensive as it is an imported foreign brand.

Hung curd – as we know no-bake cream cheese requires agar-agar or gelatin to set. but in this case, I have used hung curd which helps in the setting of cheesecake.
Condensed milk: It provide sweetness and helps in giving a smooth, creamy texture to the filling
Cornflour & lemon juice – these ingredients react with cream and helps in setting the cake
Non-dairy whipping cream: It is easy to whip. Always use chilled cream for whipping.
Step by step preparation of perfect homemade oreo cheesecake
How to make cream cheese at home
- Boil milk in a saucepan. Once boiled, stir well and let it cool for 5-7 minutes.
2. Dissolve the citric acid in warm water and keep it aside. Now add this mixture to the boiled milk gradually with stirring continuously till the milk curdled and separate a light yellow-green colour liquid.
3. Now strain the solids from the liquid and hang the solid part in a cheese cloth for about 30 minutes to drain off extra liquid.
4. After that transfer it to a mixer jar. Add 1 tbsp curd, 2 tbsp malai and 1/8 tsp salt and blend to form a smooth and creamy cream cheese. Transfer to a bowl refrigerates it for about 1-2 hours.

Making of the filling for no bake oreo cheese cake
1. Take chilled whipping cream in a bowl and start whipping it till it reaches the stiff peaks. Put it in the refrigerator till required.
2. Now, take a springform pan, grease it with oil and put it aside.
3. Add digestive biscuits to the mixer jar and grind them. then add sugar, cocoa powder and chilled butter and churn it again till they all mix well.
4. Transfer this mixture to the greased springform pan and spread evenly. With little pressure make it set. Put it in the refrigerator for 10-15 minutes.
5. Take around 100 gm of oreo biscuits, remove the cream and separate biscuits. Transfer biscuit part in a zip lock bag and crush them to make a coarse powder of it. Take out ½ part of in a bowl and put aside. Then crush the rest of the biscuit into a more fine powder and transfer it to a bowl and put it aside.
6. In another bowl take oreo biscuits cream part, cream cheese, hung curd, condensed milk, cornflour and lemon juice and whisk till they blend together very well and becomes a smooth mixture.
7. Now mix cream cheese mixture with whipped cream gently and then add half of the crushed oreo biscuits part and mix well with the mixture. The filling for the cheesecake is ready.
8. Now take out the springform pan with the base and pour this filling over it. Spread evenly with the help of a spatula. Then sprinkle powder of oreo biscuits.
9. Wrap with a cling film and put back in the refrigerator for about 7-8 hours.
10. Take out the pan, slowly remove the outer part of the springform pan.
11. Cut the cake into pieces and serve chilled. ENJOY!

- 750 ml raw toned milk
- ¼ tsp citric acid
- 2 tbsp fresh malai
- 1 tbsp curd or milk
- ⅛ tsp salt
For base
- 100 gm digestive biscuit
- 20 gm unsalted butter
- 1 tbsp sugar
- ½ tbsp cocoa powder
For filling
- 100 gm oreo biscuits
- 100 gm homemade cream cheese
- 50 gm hung curd
- 100 gm chilled whipping cream
- 3 tbsp condensed milk
- 1 tbsp cornflour
- 1 tbsp lemon juice
Instructions

Take out ½ part of it in a bowl and put aside. Then crush the rest of the biscuit into more fine powder and transfer to a bowl and put it aside.
- Now in another bowl take oreo biscuits cream part, cream cheese, hung curd, condensed milk, corn flour and lemon juice and whisk till they blend together very well and becomes a smooth mixture.
- Now mix cream cheese mixture with whipped cream gently and then add half of the crushed oreo biscuits part and mix well with the mixture. Filling for the cheese cake is ready.
- Now take out the springform pan with base and pour this filling over it. Spread evenly with the help of a spatula. Then sprinkle powder of oreo biscuits on the top.
- Wrap with a cling film anf put back in the refrigerator for about 7-8 hours.
- Take out the pan, slowly remove the outer part of springform pan.
- Cut the cake into pieces and serve chilled.
