Ingredients for White Sauce Pasta without Maida

To make white sauce pasta recipe you need following ingredients. It is a healthy creamy pasta recipe for kids you definitely give it a try.

Pasta– I have used elbow macaroni pasta here but you can use any other shaped pasta of your choice. Elbow Macaroni pasta takes very less time in cooking but others may take more so, keep an eye on the cooking of the pasta. We have to cook them till they have done up to 80%, otherwise, they will become sticky.

Flour– the traditional white sauce is made with all-purpose flour but I have used whole wheat flour as all-purpose flour or maida is not good for health. You did not notice much difference in texture and taste.

Milk-toned milk is used to make the white sauce but for richer flavour full-fat milk can be used but the calories also increased.

Veggies– give a more colourful attractive look and increase the nutritional value of this pasta. I have added carrots, onion, and shimla mirch(green capsicum). You can also add other vegetables of your choice like coloured capsicum, broccoli, sweet corn, baby corn etc. They provide a crunch as well the nutrition.

Herbs and spices– make it more aromatic and spicy red chilli flakes, black pepper powder, oregano, and salt are added. Adjust the amount of these seasonings as per your taste and preference. If you want it more spicy, increase the red chilli flakes.

Cheese– Amul brand cheese cube is used that gives a more creamy and cheesy texture to the pasta. You can use any other cheese of your choice.

How to Make White Sauce Pasta without Maida at Home-Step by Step Guide

Boiling of pasta

1.Put a saucepan on medium flame and start boiling water in it. Add 1 tsp oil and ½ tsp salt to it.

2. Once the water starts boiling, add macaroni pasta, and mix well. Now cover it and cook for 5-6 minutes on medium flame.

3. After 5 minutes, check if the macaroni is cooked well or not. If it cut easily with spoon, switch off the flame otherwise cook for 1 more minute and check.

4. Strain out extra water and run cold water into them. Keep them aside.

Sauteing of veggies

1.In a frying heat add 1 tsp oil. Add finely chopped garlic and sauté it.

2. Then add chopped onion and sauté it till its raw smell is gone and it becomes lightly golden in colour.

3. After that, add chopped carrot, shimla mirch, and 1/4 tsp salt. Cook them for 2-3 minutes. We don’t have to cook them fully. They should be crunchy. Switch off the flame.

Making of white sauce

1.In a frying pan add 1 tbsp oil and 2 tbsp butter. Wait till the butter melts. Add whole wheat flour and roast it by stirring it continuously till its colour changes to light brown.

2. Now take a whisk and add milk gradually stirring continuously with a whisk to form a lumps-free mixture.

3. Once the mixture starts to thicken add red chilli powder, black pepper powder, and oregano. Mix everything well.

4. Cook the mixture till it starts coating the spoon. Now add small pieces of cubed cheese and mix.

5. Now add sauté veggies and boiled macaroni pasta in it. Mix nicely everything together.

6. If you want sauce more liquidy then add 1/4-1/3 cup more milk in it and mix well.

7. Switch off the flame and serve it warm. Garnish with little red chilli flakes, oregano and grated cheese.
