This Colorful tutti-frutti cake recipe is an easy and fool-proof recipe that never fails. It is a one-bowl recipe where we mix wet ingredients in a bowl and then sieve dry ingredients, mix them and bake.
We all have tasted Britannia’s tutti-frutti cake sometime. It has a mixed fruit flavor and a very sweet taste due to sugar-coated tutti-frutti added to it. Here in this recipe, I have used wheat flour and suji instead of maida, also cut down the sugar content and tutti-frutti quantity to make it health-friendly. I have used vanilla, orange, and pineapple essence to mimic its flavor with Britannia cake.

To make the cake colorful, I have used mixed color tutti-frutti. These are easily available in the market even we can prepare these at home with raw papaya or watermelon peel.
How to Make Eggless Tutti Frutti Cake Recipe without Oven
This tutti-frutti cake is prepared without the use of an oven so if someone does not have an oven at home they can follow these instructions of baking in kadhai or kadai without an oven. Even a big size cooker can be used for this purpose just you have to check your cake tin will fit in the vessel you are using.

Whole wheat flour

Eggless Tutti Frutti Cake Recipe with Whole Wheat Flour-Step by Step Guide
1. First, put a kadhai on a low-medium flame, place a strand, and then a plate above it. Cover the kadhai and let it preheat for at least 10-15 minutes. Now grease a 5 X 5-inch square cake tin and put it aside.
2. Now in a mixing bowl, add oil, powdered sugar, milk powder, curd, vanilla essence, orange essence, pineapple essence. Whisk them together with the help of a whisker till it forms a creamy mixture. This step takes around 3-4 minutes.
3. Next, add milk to this mixture and mix together till they blend well. After that, put a sieve on the bowl, add wheat flour, sooji, and cornflour. Sieve it and gently fold with the wet mixture. Now leave it aside for 10 minutes.
4. After 10 minutes, check the mixture, add 1-2 tbsp more milk as it becomes hard because suji tends to absorb liquid. Now add baking powder, baking soda, and salt. Mix them well.
5. Now coat tutti-frutti with little dry flour, then fold them with the cake batter gently. Mix till the batter becomes smooth and without lumps. Do not over mix as gluten formed and the cake becomes dense.
6.Transfer the batter into the greased tin and tap it few times. Place the cake tin in the preheated kadhai and bake it for 30- 35 minutes or until an inserted knife comes clean.
7. Once done, take out from the kadhai and then put on the kitchen counter. Cover it with a kitchen towel and leave it for 4-5 minutes.
8. Then remove the cake to a cooling rack and let it cool completely. Once cool down, cut into the desired shape and serve. It tastes best the next day.
Tips and Tricks
- Baking is a science and needs very accurate measurements so, always use a weighing scale to measure your ingredients.
- Beat wet ingredients for atleast 2-3 minutes till they become light, airy, and creamy.
- Preheat the kadhai for at least 10-15 minutes before putting the cake batter inside.
- If you are baking in the oven, preheat the oven at 160 degrees Celsius and place the tin in the middle rack. Bake it for about 35-40 minutes.
- Always Coat tutti-frutti with dry flour before adding it into the cake batter so that they distribute evenly in the cake and do not sink in the bottom.
- If you do not have tutti-frutti on hands replace them with dry fruits, nuts, or even fruit peels.
- Curd should be fresh and not sour in taste.
- Cool the cake completely before cutting otherwise it will become crumble.
- Do check for doneness after 30 minutes only.
- Quantity of tutti-frutti can be increased if you want cake more sweet.
