Instant Suji Handvo Recipe is an instant savoury pancake recipe made with a combination of suji, besan, oats, curd, and veggies. This healthy vegetable handvo recipe is a quick version of a traditional Gujarati snack without fermentation.

What is Handvo?

It is a famous Gujarati traditional breakfast or snack recipe made with rice and a combination of various lentils like moong dal, chana dal, masoor dal, veggies and spices. It is a healthy low-fat recipe, needs oil only for tempering small mustard seeds, sesame seeds and curry leaves that gives a nice flavour and crunch to the recipe.

How to Make Instant Suji Handvo Recipe in a Pan

This no bake instant suji handvo recipe is a quick version of traditional Gujarati handvo recipe. It is made with using regular sooji, semolina, or rava, that is first soaked in curd for few minutes. Then veggies like carrot, beans, are added and then cook in a pan on a low flame. After getting cooked It forms a cake-like texture that’s why it is also called savoury vegetable cake. we can also bake it in the oven or in a kadhai.

This savoury pancake made with suji or semolina is so tasty, do not need any kind of special ingredients or equipment. Also, it is an instant preparation that does not require a long fermentation process.

Instant Suji Handvo Recipe Ingredients

Regular suji or semolina (Rava) – I like to use regular suji for making rava idli or handvo as it gives a little crunchier texture. You can easily replace it with fine suji if you like. Suji is a good source of minerals and vitamins, also rich in iron. It is an easily digestible food item so, the people having digestive issue easily add suji to their diet.

Besan– also known as chickpea flour gives a nice flavour and nutty taste. Also acts as a binder in the dish. Besan is a good source of protein, iron, good fats, soluble fibre and a low glycemic index food item. It helps in controlling diabetes, fight allergies and weight loss.

Oats– it is a very nutritious grain, gluten-free in nature, rich in soluble fibre that helps in reducing cholesterol level, heart-friendly and improves blood sugar.

Veggies – they are a good source of vitamin A, C, B6, folate, and fibre also low in calories. Inclusion of raw veggies in your diet helps to keep you full for a longer time.

Spices – to give nice flavour and authentic Indian taste.

Oil – gives a nice aroma and crispness to the dish and avoid sticking to the pan while cooking.

Traditionally, a special equipment is used to make this handvo, called handvo cooker but it is not necessary. You can make it simply in a non-stick pan or even on an iron griddle.

To make handvo, bottle gourd is the first choice for veggies but you can add any other vegetables of your choice.

This is a very filling and wholesome dish perfect for breakfast or evening snacks. It can also be packed in the kids tiffin with homemade tomato sauce.

It is a healthy recipe packed with nutrients and easy to cook, do not require any kind of expertise. Gujarati dishes are a little sweet in taste but it’s optional, I didn’t add any sugar to it.

Instant Vegetable Handvo Recipe-Step by Step Preparation

1. Take a bowl, add suji, besan, oats powder, salt, turmeric powder, red chilli powder, coriander powder, roasted cumin seeds powder, ginger paste, heeng, give a good mix. then add curd and mix. Add about ¼ cup of water, and leave aside for 10 minutes.

2. Now add veggies – carrot, bean, and green pepper, crushed roasted peanuts, green coriander leaves, and lemon juice to the suji mixture and mix well. Add more water if the batter is very thick. Then add eno and 1 tbsp of water to activate it, mix quickly.

3. Put a frying pan on a low flame, add 1 tbsp oil, half of the small mustard seeds and white til seeds (sesame seeds).

4. Now pour this suji and veggies mixture in the pan and spread evenly. Cover the pan and cook it for about 10-12 minutes. When the upper side becomes dry. Put a plate over the pan and turn it. 

5. Add rest of the oil, mustard seeds and til seeds. And then gently place the handvo from the uncooked side.

6. Cover the pan and cook it for 13-15 minutes.

7. Switch off the gas and let it cool down for 2-3 minutes. Transfer handvo to a plate and cut into pieces. Serve warm with coconut chutney and green chutney.

Serving Suggestions

This easy and quick Gujarati mix vegetable handvo recipe is a perfect healthy option for a quick breakfast or evening time snack. Pair it with homemade green chutney and coconut chutney. It is a great snack to pack for kids in the tiffin.

    1. If you are preparing it for breakfast you can chop vegetables in the night before and put them in the refrigerator until required.
    2. Batter of handvo should be thick. Add vegetables that release less water otherwise it takes more time to cook and become soggy.
    3. Cook handvo on a low flame otherwise it will not cook well from inside.
    4. While flipping to another side first transfer it to a plate and then place it again in the pan.
    5. Adding of eno or baking soda is very important to make handvo soft and spongy.
