A quick and easy to make veg curry cooked in tomato based gravy and very flavourful. Hare pyaz ki sabji is the popular name of this curry that is commonly used in India. We can make spring onion as a dry veg or with curry. Here, I am sharing with you a recipe with curry. It only takes 30 minutes to get on the table. Also, takes only 15 minutes if we use frozen green onion for making this recipe.

Use fresh and bright green onion with a big white part to get the perfect ratio and taste. To make this curry we just need some basic spices. You can increase or decrease the spice quantity according to your taste buds. I have not added any ginger or garlic in this curry recipe but if you prefer you add them.

Step by step preparation of green onion veg curry

  1. Wash green onions thoroughly. Separate green part and the white part.  Cut into small pieces separately and put them aside.

2. Now in a pan, heat oil, add cumin seeds and wait till they crackle.

3. Add chopped white part of onion and green chillies. Saute them for 2-3 minutes till the onion becomes slightly soft.

4.Now add tomato puree, coriander powder, turmeric powder, salt, garam masala and cook till it starts leaving oil.

5. Finally, add chopped potato and green part of the onion and sauté it for 1-2 minutes. Add 2 katori water and mix.

6. Cover the pressure cooker and cook up to 3 whistles on medium flame.

7. Once the pressure is released, transfer to a serving bowl and serve with chapatti or rice.

How to choose green onion or spring onion for making veg curry?

Green onion has a short shelf life. Choose fresh bulbs with young green leaves to get the best taste. While storing, separate the white and green parts. The white part can be stored in the refrigerator but cut the green part into smaller pieces and transfer to a freezer-safe box and then store in the freezer to increase the shelf life.

  • 250 gm green onions with green part intact

  • 2 tbsp oil
  • 2 green chillies finely chopped
  • ½ tsp cumin seeds
