Instructions
Step 1 -Mixing of wet ingredients
In a mixing bowl, combine coconut oil, jaggery powder, warm water, and vanilla essence. Mix until the jaggery dissolves completely.
Step 2 -Mixing of dry ingredients
In another bowl, sieve together ragi flour, milk powder, baking powder, baking soda, and salt. Add the oats flour and cocoa powder. Mix well.
Step 3 -Mixing of wet and dry ingredients
Add the dry ingredients to the wet mixture and gently fold everything together until no dry flour remains. Avoid overmixing.
Step 4 - Adding nuts to the mixture
Mix the chopped nuts with besan. Fold them gently into the batter. Finally add vinegar and mix gently. Do not overmix after adding vinegar.
Step 5 - Pouring batter to the moulds
Line a muffin tray with cupcake liners. Divide the batter equally into 6 cupcake moulds. Sprinkle chocolate chips on top.
Step 6 - Baking of cupcakes
Bake in a preheated oven at 180°C for 20–22 minutes. Check doneness by inserting a toothpick into the center. If it comes out clean, the muffins are ready.
Cool them completely before serving.

Notes
Use fresh baking powder and baking soda for the best rise.
Do not overmix the batter, or the muffins may become dense.
Warm water helps dissolve jaggery faster.
Measure ingredients accurately for consistent results.
Let the muffins cool completely before removing them from the liners.
Toast the nuts lightly before adding for extra flavor.
