How to Make Healthy Eggless Chocolate Oats Ragi Muffins

Step 1 -Mixing of wet ingredients

In a mixing bowl, combine coconut oil, jaggery powder, warm water, and vanilla essence. Mix until the jaggery dissolves completely.

Step 2 -Mixing of dry ingredients

In another bowl, sieve together ragi flour, milk powder, baking powder, baking soda, and salt. Add the oats flour and cocoa powder. Mix well.

Step 3 -Mixing of wet and dry ingredients

Add the dry ingredients to the wet mixture and gently fold everything together until no dry flour remains. Avoid overmixing.

Step 4 – Adding nuts to the mixture

Mix the chopped nuts with besan. Fold them gently into the batter. Finally add vinegar and mix gently. Do not overmix after adding vinegar.

Step 5 – Pouring batter to the moulds

Line a muffin tray with cupcake liners. Divide the batter equally into 6 cupcake moulds. Sprinkle chocolate chips on top.

Step 6 – Baking of cupcakes

Bake in a preheated oven at 180°C for 20–22 minutes. Check doneness by inserting a toothpick into the center. If it comes out clean, the muffins are ready.

Cool them completely before serving.

Expert Tips

  • Use fresh baking powder and baking soda for the best rise.
  • Do not overmix the batter, or the muffins may become dense.
  • Warm water helps dissolve jaggery faster.
  • Measure ingredients accurately for consistent results.
  • Let the muffins cool completely before removing them from the liners.
  • Toast the nuts lightly before adding for extra flavor.

Variations

  • Add raisins or chopped dates.
  • Replace cocoa powder with cinnamon for a different flavor.
  • Sprinkle pumpkin seeds or sunflower seeds on top.
  • Add dark chocolate chunks instead of chocolate chips.
  • Use chopped walnuts for a richer texture.

Storage Tips

Room Temperature: Store in an airtight container for up to 2 days.

Refrigerator: Keeps well for 5–6 days.

Freezer: Freeze individually for up to 2 months. Thaw and warm slightly before serving.
