However, if your sattu has a slight raw smell, lightly roast it on low flame for 3–4 minutes. Do not over-roast it, and make sure to cool it completely before making the modaks.
Jaggery syrup – I have used homemade jaggery syrup. Check how to make jaggery syrup at home. You can also use jaggery powder instead but in that case you should use more milk for binding.
Milk powder – helps to give the modaks a creamy texture and also improves binding.
Cocoa powder – adds a delicious chocolate flavour without adding sugar.
Cold milk – bring the mixture together and form a dough-like consistency.
Ghee- a small amount of ghee helps the prepared modak release easily from the mould.

Step by Step Instructions For Making Chocolate Flavored Sattu Modak at Home
1. Prepare the Sattu
Take 1 cup chana sattu in a large mixing bowl. Sattu is already roasted, so you can directly use it.
But if you notice a raw smell, lightly roast it on low flame for about 3–4 minutes. Allow it to cool completely before proceeding.
2. Add Cocoa and Milk Powder
Add ¼ cup milk powder and 2 tbsp unsweetened cocoa powder. Mix everything thoroughly.
Make sure there are no lumps in the mixture.



3. Add Jaggery Syrup
Now gradually add the homemade jaggery syrup. Don’t add it all at once. Add 1 tablespoon at a time, mixing well after every addition.
I used a total of 5 tablespoons jaggery syrup. If you prefer sweeter modaks, you can add another 1–2 tablespoons according to your taste.





4. Add Cold Milk
Now gradually add 2–3 tablespoons cold milk. Start with 2 tablespoons and mix well. Add a little more only if required.
The mixture should come together and form a dough-like consistency. It should not be too soft or too tight.
5. Shape the Modaks
Take a small modak mould and grease it lightly with ghee. Close the mould and fill it with the prepared sattu mixture.
Press the mixture firmly into the mould so that it takes the shape properly.
Remove any excess mixture around the edges. Now gently open the mould and carefully remove the modak.
Your beautiful sattu modak is ready!

You can also fill both halves of the modak mould separately. Press the mixture firmly into both sides, close the mould and press it together properly.
Remove any excess mixture around the edges. Open the mould gently and take out the prepared modak.
