Ingredients
For Corn Dhokla
Suji
Fine or regular semolina forms the base of the batter and helps give the dhokla structure and a soft, slightly grainy texture.
Besan
Besan adds flavour and makes the dhokla more nutritious and satisfying compared with using only suji.
Dahi
Use fresh plain curd. It adds a mild tanginess and helps create a soft texture.
Fresh sweet corn
Fresh corn provides natural sweetness, colour and flavour. Grind it into a coarse paste rather than a smooth puree.
Ginger & Green chilli
Adds freshness and flavour to the corn mixture. Adjust according to your taste.
Spices
Only very spices are used like turmeric powder, salt and heeng to enhance the flavour.
Eno
Helps aerate the batter and gives the dhokla a light and fluffy texture. You can replace it with baking soda if eno is not available.
Lemon juice
The acidity activates Eno and also adds a pleasant tang to the dhokla.
Water
Use gradually to get the right batter consistency.

For the Tempering
Oil
Use your preferred cooking oil. Since the tempering is distributed throughout the finished dish, you can keep the quantity controlled.
Mustard seeds & Curry leaves
To add flavour and enhance taste
Carrot , Shimla Mirch and Fresh Sweet Corn
Finely chopped carrot adds colour, crunch and natural sweetness. Adding vegetables and other plant foods to meals can help increase fibre intake as part of a balanced diet.
Sesame seeds
Sesame adds a lovely nutty flavour and pleasant crunch.
Salt
According to taste to make the dish more flavourful.
How to Make Corn Dhokla
1. Prepare the batter
In a bowl, add ¼ cup suji, ¼ cup besan and ¼ cup curd. Add water gradually and mix to make a thick batter.
Cover and keep aside for 15–20 minutes.


2. Prepare the corn paste
Add 1 cup fresh corn, ginger and green chilli to a grinder. Grind into a coarse paste.
A small mixer-grinder or food processor makes it easy to get the corn to the right coarse texture.
Don’t make it completely smooth. Small pieces of corn give the dhokla a better texture.


3. Adjust the batter
After resting, the suji will absorb some of the liquid and the mixture will become thicker. Add the coarse corn paste.
Add about 1 tablespoon water to the grinder jar, swirl it around and add this water to the batter as well. Mix well.
Add turmeric, salt and hing.




4. Add Eno
Just before steaming, add ½ teaspoon Eno. Squeeze in the juice of ½ lemon. Use a silicone spatula to gently fold the Eno into the batter. Mix gently, don’t overmix the batter after adding Eno.



5. Steam
Immediately transfer the batter to a greased steaming plate. Spread it evenly.
Place in a preheated steamer, cover and steam on medium flame for 12–13 minutes.
Meanwhile chop finely carrot and shimla mirch or other veggies of your choice and keep aside.



6. Chop the vegetables for tempering
I use a steamer to make this dhokla. If you don’t have one, you can use a regular steaming setup.
Check with a knife or toothpick. If it comes out clean, the dhokla is ready. Remove and allow it to cool for 2–3 minutes. Cut into pieces.
7. Prepare the vegetable tempering
Heat 1 tablespoon oil in a pan. Add mustard seeds. Once they start crackling, add curry leaves, chopped carrot and capsicum. Add ½ cup fresh corn.
Cook for about 2–3 minutes on low flame. Add sesame seeds and salt.



8. Add the dhokla
Add the prepared dhokla pieces to the pan. Gently toss everything together.
Avoid vigorous stirring because the soft dhokla pieces can break. Switch off the flame.

Can I use frozen corn instead of fresh corn?
Yes. You can use frozen sweet corn. Thaw it completely and drain any excess water before grinding.
Can I make corn dhokla without Eno?
Eno helps make this version light and fluffy. If you don’t have Eno, can use baking soda but the texture may be different, so I recommend using it for this particular recipe.
Why did my corn dhokla become hard?
Over-steaming, too little moisture or overmixing after adding Eno can result in a harder texture. Steam just until a knife comes out clean.
Why should the corn be ground coarsely?
A coarse corn paste gives little bites of corn throughout the dhokla and makes the texture more interesting. A completely smooth paste can make the dhokla denser.
Can I prepare the batter in advance?
You can prepare the suji-besan-curd mixture ahead of time, but add the corn paste, Eno and lemon juice closer to steaming for the best texture.
Is corn dhokla good for breakfast?
