Ingredients
🥛 Milk
Milk forms the base of this ice cream and gives it a rich, creamy texture. It also provides protein, calcium, and essential nutrients. Using full-fat milk results in a creamier ice cream.
🌾 Rice Flour
Rice flour acts as a natural thickener in this recipe and replaces cornflour. It helps create a smooth, creamy consistency while keeping the recipe simple and wholesome.
🍯 Desi Khand
Desi khand is a less processed alternative to refined sugar. It adds sweetness along with a mild caramel-like flavor and retains some natural minerals that are lost during sugar refining.
✨ Turmeric Powder
A tiny pinch of turmeric gives the ice cream a beautiful natural golden-yellow color without using artificial food colors. The quantity is so small that it doesn’t affect the taste.
🥣 Whipping Cream
Whipping cream makes the ice cream rich, airy, and creamy. When whipped, it incorporates air into the mixture, resulting in a soft and smooth texture.
🍬 Butterscotch Essence
Butterscotch essence provides the classic buttery caramel flavor that makes butterscotch ice cream so delicious and recognizable.
🍯 Jaggery Praline
Jaggery praline is the star ingredient of this recipe. Made from jaggery and nuts, it adds a deep caramel-like flavor and delightful crunch in every bite. It gives the ice cream its signature butterscotch taste without using refined sugar.

How to Make Healthy Creamy Butterscotch Ice Cream
Step 1: Prepare the Milk Base
In a bowl, combine milk, desi khand and rice flour. Mix well until smooth and lump-free. Transfer the mixture to a pan and cook on low heat. Add turmeric powder for a natural butterscotch-like colour. Keep stirring continuously until the mixture thickens slightly. Switch off the flame and allow it to cool completely.
Step 2: Freeze and Whip
Transfer the cooled mixture to the freezer for 1-2 hours. Once slightly set, remove it from the freezer and whip until smooth, creamy and fluffy.
Set aside.
Step 3: Whip the Cream
In a separate bowl, add chilled whipping cream. Whip on low speed first. Once it begins to thicken, increase the speed to medium and whip until soft peaks form.
Step 4: Combine Everything
Add butterscotch essence and the prepared milk mixture to the whipped cream. Fold gently using a spatula. Whisk for a few seconds using a hand beater to combine evenly.
Step 5: Add Jaggery Praline
Add half of the jaggery praline to the mixture and gently fold it in. Reserve the remaining praline for topping and garnish.
Step 6: Freeze
Transfer the mixture into a freezer-safe container. Do not fill the container completely to the top. Cover and freeze for 6-7 hours or overnight until fully set.
Serving Suggestions
Scoop the ice cream into bowls or cones and sprinkle the reserved jaggery praline on top for extra crunch and flavour.
